My opinions on various cheeses which I have consumed, which I would like to consume again, and which to desperately avoid. This is to serve as a guide for myself (and potentially others) as to what to get to ensure the happiest me possible!
Blue cheeses.

Blue d'Auvergne

Nice salty, spicy blue cheese with lots of flavor. Awesome for on pizza or enjoyed with some wine. 8.5/10

Fourme d'Ambert

Decently flavorful, real creamy, not very crumbly. Good blue cheese 7.5/10

Saint Flour

Sweeter blue cheese, not very crumbly, decently good. Got some funkiness. 7/10

Viking Blue

Quite good, but the intensity of the flavor leaves some things to be desired. 7/10

Creamy Blue

Just a funky Brie. 5/10

White Mold cheeses.

Brie

Fantastique. Amazing. Just, a great cheese. Very easy to make awesome sandwiches with! 8.3/10

Camembert

Intensely good strong flavor. Great for mixing with good bread, A bit too liquid to easily use in a cheese platter. 7.8/10

Hard cheeses

Gouda 1000 day aged

Spicy cheese with lots of mature crystals of flavovered bliss. 9/10

Gouda 48+ overaged

Great strongly flavored crumbly aged cheese. 8/10

Gouda 48+ aged

Very good strongly flavored old cheese. 7.8/10

Gouda 48+ mature

Good and flavorful cheese. Quite sturdy still. 7.5/10

Emmentaler

Tastes like lightly flavored rubber. 4.5/10

Goatmilk cheeses.
